India is the world’s largest producer of fruits and vegetables. However, due to post-harvest losses, which account for 25% to 30% of production, the availability of fruits and vegetables is limited. Apart from that, the quality has been harmed and has even decreased. Apart from that, the consumer’s quality is harmed and even reduced when the product is purchased.

Even after taking on the difficult effort of growing high-value fruits and vegetables every year, our farmers remain impoverished. The addition of cold storage / cold room units will assist them in dividing the risk of a distressed sale, resulting in higher returns.

The lack of cold storage / cold room space is one of the key reasons for starting this business and utilizing this potential market. As a result, developing cold storage/cold chain facilities in the country will benefit horticulture growers financially while also offering a good return on investment for you.

One of the primary motivations for starting this company and utilizing this technology is to help people. Around 70% of people in Orissa rely on agriculture to make a living. Encouragement and assistance for those individuals will improve the region’s overall standing. Farmers in our state have a poor economic situation when compared to other parts of the country.

Demand & Supply

The majority of farmers are experiencing financial difficulties. Beans, cabbage, sweet potato, onion, Brinjal, pea, and other crops with a short shelf life are grown by about 47 to 48 percent of all farmers. It’s the same with fruits once they’ve been gathered. Post-harvest cooling removes field heat quickly, reduces respiratory activity, reduces internal water, reduces wilting, inhibits microbe growth, and reduces the generation of natural ripening compounds like ethylene.

Farmers may also sell fruits and vegetables at the best possible time, thanks to post-harvest chilling. Due to the lack of cooling and storage units, it is necessary to sell the product as soon as it is harvested, resulting in high returns or profits. This can be advantageous to varieties that offer their product to hotels or vegetable stores and small gardeners who have a truckload of produce to transport. Post-harvest chilling is a critical step in ensuring that consumers receive high-quality veggies.

A guide to Cold Storage for 5000 MT In India

What is the purpose of having a Cold Storage unit? Farmers’ financial situation does not allow them to set up cold storage with 5000 MT, which is used to store 50,000 quintals of produce in facilities that cost crores of rupees to build.

The cold room concept is favored for vegetables, fruits, and flowers that need to be kept for a shorter period so that a farmer can store and sell them without causing product damage and keeping them fresh. Farmers will also obtain the correct quantity of the commodity. A farmer can plan to build up a store for his extra vegetables and fruits because the capital required to set up a unit with a capacity of 5000 MT is relatively modest.

Basis and presumptions of the Cold Storage

Capacity utilization

X Because of the short shelf life of vegetables and the availability of products for storage 365 days a year, capacity utilization for cold storage for fruits and vegetables is typically around 70%. Cold storage generally is only operational for 300 days per year. The intended business’s cold storage capacity is mainly for storing fruits and vegetables for one to four weeks. Such cold storage will enable them to negotiate a better price for their produce wholesale markets, which are available weekly or bi-weekly.

Income: In the next section, you’ll learn how to make money with cold rooms.

(a) Those who rent cold storage space shall be charged daily. Daily, the space rent is projected to cost Rs.0.40p per kg.

(b) Obtaining and exchanging fruits and vegetables can also provide income.

(c) As a result, the following two methods can be used, as well as a 50/50 split between own trading and renting.

Loading and unloading of vegetables and fruits

Contract laborers do the loading and unloading of vegetables in the cold chamber; the costs will be incurred and deducted from the money earned by the space hirers.

Salary & wages:

For cold room operations, one operator is sufficient, with monthly compensation of around Rs. 50,000/-.

Chamber size:

The chamber size for a 5000 MT capacity unit might be 10000′-0”x 8000”-0”x 8000-0”. M.S. channels and angles could be used to construct the storage racks.

Insulation:

The cold room walls and ceiling are insulated with a 60 mm thick PUF panel. The floor is insulated with an 80 mm EPS slab, PCC, and KOTA stone. Chicken wire is the most common type of robust insulation.

Cooling Unit:

The cooling unit requires R-22/ R 404A refrigerant. Inside the store, a room temperature of 2°C to 6°C is sufficient to keep the temperature stable. For cooling units with a capacity of 5000 MT, the overall cooling capacity will be roughly 20,000 BTU/hr.

Power Supply:

The electric load for a unit with a capacity of 5000 MT will be around 2000 KW. The required power source is 23000 Volt/1Ph/5000 HZ.

Electrical Work:

The primary power distribution switchboard, feeder switches required in cooling units, power distribution cables, capacitors, electric lights, and earthing provisions for the entire unit are all part of the electrical work.

Stand by Generator:

During power outages, a stand-by generator must be available to meet the continuous power demand. When there is a power outage, the generator must start automatically.

Methods to store fruits and vegetables in Cold Storage m

Refrigeration (cold store) – The ideal temperature for storing fresh fruits and vegetables is the lowest temperature that does not cause damage to the product due to chilling. As a result, the temperature regulator in cold storage is essential. The refrigerated gas (e.g., Ammonia, Freon, etc.) removes heat from the store as it expands under mechanical refrigeration.

The heat is discharged from the compressed gas using running water or circulating air on the tubes that contain the hot gas. The gas is liquefied, and the cycle begins again. This precise process controls the temperature.

Specification of a Cool Chamber/Cold Room

Except for a few fruits like apples, potatoes, oranges, cabbage, and others, the storage life of fruits and vegetables, even at low temperatures, is typically 2–4 weeks. Long-term storage is discouraged in cold rooms, with storage periods ranging from one to four weeks.

The objective of the Scheme:

(i) To build a small chill room/cool chamber at vegetable markets or near farmer’s cultivation grounds where the fruits/vegetables would be grown.

(ii) To save the additional quantity of veggies in the daily market for later sale.

(iii) To alleviate the agony of having to sell rotting veggies at the market.

(iv) To put in place a cold chain provision in the premise.

(v) To enhance farmers’ income.

Strategy:

The strategies listed below will be used to achieve the objectives above.

(i)The most appropriate system will be utilized to reduce vegetable distress sales.

(ii) Farmers will earn from the sale of veggies at the market in the coming days.

(iii) With the active engagement of refrigerated enterprises, capacity building of farmers and field officials will be carried out through training and demonstrations.

The pattern of assistance:

a) A subsidy of 40% of the entire project cost is provided, with a maximum limit.

b) The beneficiary is responsible for the remaining 60% of the payment.

The implement storage unit will have the below functions:

(a) To provide financial assistance to the beneficiary under the PHM plan.

(b) To submit utilisation certificates and progress reports on a regular basis.

(c) To release financial assistance after the equipment is installed.

Economics of Cold Storage in India

Cost of Land and Development Expenses : Rs. 1,00,00,000

Building construction and other civil works: Rs. 1,25,00,000

Plant machinery & other equipment’s : Rs. 1,50,00,000

Utilities: Rs. 25,00,000

Technical requirements: Rs. 3,00,000

REVENUE analysis

A. Goods stored on a rented basis = 3500 MT

Revenue will be collected from customer Rate 0.40 x 3500 MT x 300 Days = Rs.4,20,00,000.

B. Products will be stored by own trading = 1000 MT (5 rotations in a year)

Average profit of mixed vegetables = Rs.5 / kg

Revenue for 5000 MT vegetable = 500000 Kg.  x Profit Rs. 5 /Kg.  = Rs.25,00,0000

Total revenue will be A +B = Rs. 4,20,00,000 + Rs. 25,00,00,000 = Rs. 4,45,00,000.
